Olive oil
White onion, diced
Sweet potato, peeled and diced to 2cm cubes
Butternut squash, peeled and diced to 2cm cubes
Vegetable stock


  1. Heat oil
  2. Add onions and soften,
  3. Add sweet potato and butternut squash; cook for a couple of minutes whilst stirring
  4. Add stock and bring to the boil, turn down heat and simmer for around 45 minutes.
  5. Blend soup and serve with crusty bread.
